Lentinula edodes, commonly known as Shiitake, is also referred to as the Sawtooth oak mushroom, Black forest mushroom, Golden oak mushroom, or Oakwood mushroom. Its Chinese name, Xiang Gu (Fragrant Mushroom), reflects its aromatic qualities. Originating from East Asia, Shiitake is renowned as the first cultivated mushroom dating back to the 13th century. With its distinctive earthy and smoky flavor, often described as umami, Shiitake ranks as the second most commonly cultivated edible mushroom globally, widely available for consumption.

More about

Lentinula edodes

Main uses as Mushroom Powder:

  • The Shiitake powder acts as a prebiotic, offering a good source of fiber without any discernible mushroom flavor. Renowned for its delicious taste, it boasts an excellent nutritional profile, featuring polysaccharides, lentinan, ergothioneine, lectin, amino acids, triterpenoids, nucleotides, minerals, high levels of B vitamins and pro-vitamin D2 (ergosterol).
  • In cosmetics, it serves as a raw material adaptable for various processing methods based on the intended application in the final product.

Main uses as Mushroom Extract:

  • With its characteristic and pleasant mushroom flavor, Shiitake extract complements savory or spicy combinations. In a lower percentage and 30% grade extract, it pairs well with fruity or sweetish mixes, enhancing chocolate-based products.
  • 50% extract offers a strong and dominant flavor, albeit with a rather unpleasant taste. Best suited for tableting or encapsulation, it boasts greater therapeutic properties. Suitable for seasoning, spices, dry meals, savory treats, beverages, protein mixes, and supplement formulations.
